Ingredients
- Sugar - 5.3 oz
- Chocolate Gingerbread Cookies - 7.9 oz
- Butter - 2.6 oz
- Corn Starch - 2 tablespoons
- Fresh Berries - 2 lbs
Step by Step guide
Step 1
Crush the ginger cookies and 2 tablespoons of sugar in a blender. In a 23 cm pie dish, mix the crumbs and melted butter with a fork. Press the mixture into the bottom and sides of the dish to form a small crust. Bake the crust in a preheated oven at 374°F for 8 minutes. Cool on a rack.
Step 2
In a saucepan, mix the cornstarch and 2 tablespoons of cold water. Add half of the blueberries and the remaining 100 grams of sugar. Bring to a boil over medium heat, mashing the blueberries against the sides of the saucepan with a spoon. Boil for 1 minute, stirring constantly. Remove the saucepan from the heat. Add the remaining blueberries.
Step 3
Pour the blueberry mixture into the crust. Cover with plastic wrap and refrigerate for about 5 hours, preferably overnight.
