Blueberry Sour Cream Pie with Lemon Cream

Ingredients

  • Wheat Flour - 3.3 cups
  • Coarse Salt - 1 tablespoon
  • Butter - 21.2 oz
  • Sour Cream - 5 tablespoons
  • Sugar - 2 cups
  • Vanilla extract - 1 teaspoon
  • Large eggs - 9 pieces
  • Fresh Berries - 2 cups
  • Fine white sugar - 2 tablespoons
  • 10% cream - 1 cup
  • Powdered Sugar - 1 tablespoon
  • Grated Lemon Zest - 2 teaspoons

Step by Step guide

Step 1

Preheat the oven to 320°F. Grease 2 loaf pans with butter.

Step 2

In a bowl, mix the flour, reserving 2 tablespoons, and salt.

Step 3

In another bowl, beat the softened butter, sour cream, and 2 cups of sugar with a mixer (whip for about 8 minutes). Add vanilla and mix lightly again.

Step 4

Lightly beat the eggs and gradually incorporate them into the sour cream mixture. Then gradually add the flour, mixing well. In a small bowl, toss the berries with the reserved 2 tablespoons of flour, then gently fold them into the batter.

Step 5

Divide the batter between the pans.

Step 6

Sprinkle fine white sugar on top and bake in the oven for 65–70 minutes.

Step 7

Leave in the pans for 30 minutes and then transfer to serving plates.

Step 8

Meanwhile, make the lemon cream. In a bowl, mix the cream, powdered sugar, and zest. Whip to stiff peaks.

Step 9

Serve the pie topped with lemon cream.
