Blueberry Tartlets
Ingredients
- Wheat Flour - 4.2 oz
- Salt - to taste
- Butter - 3 oz
- Powdered Sugar - 1.8 oz
- Water - 1 fl oz
- Sugar - 1.8 oz
- Corn Starch - 0.3 oz
- Meyer Lemon Juice - 0 fl oz
- Fresh Berries - 10.6 oz
- Grated Lemon Zest - 0.2 oz
Step by Step guide
Step 1
In a food processor, combine the flour, powdered sugar, and a pinch of salt. Then add the chilled butter cut into small pieces and mix until crumbly. Gradually add the water, one tablespoon at a time, until the dough begins to come together, but do not overmix.
Step 2
Divide the dough in half and shape into 2 discs. Wrap in plastic wrap and refrigerate for 30 minutes.
Step 3
Divide 1 disc into 12 pieces and roll each piece into a circle about 5 cm in diameter. Place each circle into muffin tins, pressing them firmly. Repeat the same with the second disc of dough.
Step 4
Preheat the oven to 392°F.
Step 5
In a small bowl, mix the sugar, cornstarch, lemon juice, lemon zest, and a pinch of salt. Add the blueberries and mix well.
Step 6
Fill the tartlet shells with the blueberry filling and bake in the oven for about 25 minutes until the dough is golden and cooked through.
Step 7
Cool for 10 minutes in the pan and then carefully remove with a knife. Allow to cool completely.
