Boston Pie
Ingredients
- Butter - 8.8 oz
- Wheat Flour - 1½ cups
- Baking Powder - 2 teaspoons
- Salt - a pinch
- Sugar - 2 cups
- Farm fresh eggs - 3 pieces
- Milk - 17 fl oz
- Corn Starch - ¼ cup
- Bittersweet Chocolate - 3.5 oz
- Cream - ½ cup
- Vanilla extract - 3 teaspoons
- Egg white - 6 pieces
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Grease a round 22 cm diameter baking pan with butter and dust with flour.
Step 3
In a separate bowl, mix the flour, baking powder, and salt, and set aside.
Step 4
In another bowl, beat 190 grams of butter, 1 cup of sugar, and 2 teaspoons of vanilla extract. Continuing to beat, add the 3 eggs one at a time. Gradually add the dry ingredients and 150 ml of milk in 3 additions, starting and ending with the dry ingredients. Mix well.
Step 5
Bake for about 35 minutes (check for doneness with a toothpick). Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Step 6
For the filling, mix 1 cup of sugar, cornstarch, and salt in a saucepan. Add 6 egg yolks and whisk everything until smooth. Add 350 ml of milk and place the saucepan over medium heat. Cook, stirring constantly, until thickened, about 10 minutes. Remove from heat, add 60 grams of butter, whisking until smooth; add 1 teaspoon of vanilla extract. Transfer the mixture to a bowl and cover with plastic wrap; refrigerate for at least 2 hours.
Step 7
For the glaze, finely crumble the chocolate into a bowl. Bring ½ cup of cream to a boil and pour it over the chocolate. Let sit for a couple of minutes until the chocolate melts. Gently stir until smooth and homogeneous. Let sit for about 10 minutes.
Step 8
Cut the pie horizontally into 2 layers so that the top layer is slightly smaller than the bottom layer.
Step 9
Spread the chilled milk filling on the bottom layer. Cover with the second layer and pour the chocolate glaze over it. Place the cake in the refrigerator for at least 30 minutes. Serve chilled or at room temperature.
