Bran Pancakes with Cottage Cheese and Spinach
Ingredients
- Bran - 2.8 oz
- Cottage cheese - 8 tablespoons
- Fresh basil leaves - 3.5 oz
- Chocolate eggs - 4 pieces
- Baking Powder - a pinch
- Salt - a pinch
Step by Step guide
Step 1
Beat the eggs (4 small or 3 large), add the bran and mix thoroughly.
Step 2
Finely chop the spinach leaves.
Step 3
Stir the cottage cheese (or homemade curd as in my case), spinach, salt, and baking powder into the egg mixture, mixing thoroughly, preferably so that the large curds break down into smaller pieces.
Step 4
Fry in olive oil or without it in a non-stick skillet.
Step 5
Serve with sour cream, for example, low-fat.
