Brazilian Banana Pie
Ingredients
- Egg white - 4 pieces
- Vegetable Oil - 5 fl oz
- Wheat Flour - 22.9 oz
- Kefir - 7 fl oz
- Baking Powder - 1 tablespoon
- Vanilla extract - 1 tablespoon
- Bananas - 5 pieces
- Sugar - 3.5 oz
- Butter - 3.2 oz
- Cinnamon - 1 teaspoon
- Salt - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a springform pan (I used a silicone one about 25 cm in diameter) with a thin layer of butter and sprinkle with flour. Prepare the bananas: wash, peel, and slice them into rounds.
Step 2
In a small bowl, mix 150 grams of flour, sugar, cinnamon, and salt. Cut the cold butter into small cubes and add it to the dry mixture. Rub everything together with your hands until it resembles crumbs. Refrigerate until use.
Step 3
Separate the egg whites from the yolks. Place the egg whites in a clean bowl and beat with salt at high speed until fluffy and stiff.
Step 4
Transfer the egg white mixture to another container and chill.
Step 5
In the same bowl, combine the egg yolks and sugar. Beat at medium speed for about 8–10 minutes or until the mixture increases in volume and lightens in color.
Step 6
Continuing to beat, add the vegetable oil, kefir, and vanilla extract. Mix everything well.
Step 7
Sift in 500 grams of flour and baking powder. Gently mix until combined. Using a silicone spatula, fold in the beaten egg whites with careful movements from bottom to top. Pour half of the batter into the prepared pan. Distribute the bananas on top.
Step 8
Sprinkle the bananas with half of the crumb mixture. Cover with the remaining batter, followed by another layer of crumbs.
Step 9
Place the pan in the preheated oven on the middle rack. It is best to place an empty baking sheet on the lowest rack, as the pie will rise significantly and crumbs may fall. Bake the 'Cuca de Banana' for about 50–60 minutes. Check for doneness with a wooden skewer; it should come out dry. You may need a little more time; if so, cover the top of the pie with foil and continue baking until done.
Step 10
Remove the finished banana pie and let it rest in the pan for 15 minutes. Then remove the sides and you can serve it with tea. It is good both warm and at room temperature.
