Ingredients
- Unbleached flour crackers - 10.6 oz
- Wheat Flour - 7.1 oz
- Salt - to taste
- Water - 12 fl oz
- Dried Apricots - 7.1 oz
- Dry yeast - 0.4 oz
- Oat flakes - 2.8 oz
Step by Step guide
Step 1
Preheat the oven to 482°F.
Step 2
Mix both types of flour and rub in the yeast until it forms a fine crumb. Add salt, water, pieces of dried apricots, and knead the dough. Shape the dough into a ball, cover it, and let it rest for 1 hour.
Step 3
Sprinkle the surface with flour, flatten the dough, and divide it into 4 parts. Roll into balls again, cover, and let rest for 10 minutes.
Step 4
Fold each piece of dough into thirds, sequentially tucking in the ends and sealing. Then fold the dough lengthwise — you should have elongated loaves.
Step 5
Sprinkle oat flakes on the surface, brush each loaf with water, and roll in the flakes. Make cuts with a sharp knife.
Step 6
Line a baking sheet with parchment paper, place the loaves on it, and let them rest for 1 hour.
Step 7
Spray the oven walls with water from a spray bottle, place the loaves inside, reduce the temperature to 428°F, and bake for 15–20 minutes.
