Bread with Smoked Bacon and Red Onion
Ingredients
- Wheat Flour - 14.1 oz
- Coarsely Ground Rye Flour - 3.5 oz
- Salt - to taste
- Water - 12 fl oz
- Olive Oil - 1 tablespoon
- Balsamic Vinegar - 1 teaspoon
- Dry yeast - 0.4 oz
- Bacon - 8 pieces
- Spanish onions - 1 head
Step by Step guide
Step 1
Chop the bacon and fry it in vegetable oil with balsamic vinegar. Add the chopped onion, mix, and cook for another 2 minutes.
Step 2
Preheat the oven to 482°F.
Step 3
Mix both types of flour, rub the yeast until it forms a fine crumb. Add salt, water, the previously fried mixture, and knead the dough. Form the dough into a ball, cover it, and let it rest for 1 hour.
Step 4
Place the dough on a surface, divide it into 4 parts, form balls, and cover them, letting them rest for another 10 minutes.
Step 5
On a floured surface, shape the dough into 4 tight loaves. Place the loaves seam side down on a baking sheet lined with a towel and sprinkled with flour, cover, and let rise for 1 hour.
Step 6
Preheat the oven to 482°F.
Step 7
Transfer the loaves to an inverted baking sheet and make a circular cut on each loaf with a sharp knife.
Step 8
Spray the oven walls with water from a spray bottle, place the loaves inside, reduce the temperature to 428°F, and bake for 5 minutes.
Step 9
Reduce the temperature to 374°F and bake for another 15 minutes.
