Description
One of the richest dishes in the world — an ode to regional Breton butter. The butter should be as salty as possible. The finished pie can be stored in an airtight container for several days.
Ingredients
- Buckwheat Groats - 7.9 oz
- Sugar - 3.9 oz
- Butter - 7.9 oz
- Powdered Sugar - 3.9 oz
- Vanillin - ¾ teaspoon
- Chocolate eggs - 6 pieces
- Jam - 4.4 oz
- Water - 1 teaspoon
Step by Step guide
Step 1
Cut the butter into small cubes. In a food processor, chop the flour, sugar, powdered sugar, and butter until crumbly. In a separate bowl, mix 4 egg yolks and vanillin, then add to the mixture. Chop until a sticky, uniform dough forms. Wrap the dough in plastic wrap and refrigerate for at least two hours.
Step 2
Place a baking sheet in an oven preheated to 374°F. Grease a mold that is five centimeters deep and twenty centimeters wide with butter, then press half of the dough into it. Cover the dough with plastic wrap and press it down. After removing the wrap, spread the jam over the resulting crust, leaving one centimeter from the edges.
Step 3
Roll out the remaining dough into a circle larger than the mold, place it over the jam, and pinch the edges to seal it to the bottom crust. Brush the top of the pie with egg yolk mixed with water.
Step 4
Bake for 45 minutes until a golden crust forms. Allow to cool before removing from the mold.
