- Veal Mince - 5 oz
- Chicken Egg - 5 pieces
- Onion - 1 head
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - to taste
- Parsley - to taste
Step by Step guide
Step 1
Chop the onion into small cubes or blend it in a food processor.
Step 2
Mix the minced meat, adding onion, as well as pepper and salt to taste.
Step 3
Add one raw egg to the mixture. Divide it into 4 equal portions.
Step 4
Crack one egg into a bowl and whisk it lightly. Pour it onto a flat plate.
Step 5
Roll out one portion of the minced meat thinly on a floured board, to the diameter of the pan in which the brizol will be cooked. Tip! You can also roll out the minced meat between sheets of plastic wrap — this prevents it from sticking to the rolling pin and makes it easier to transfer to a plate.
Step 6
In a skillet, heat a couple of tablespoons of vegetable oil.
Step 7
Transfer the meat patty onto a plate with the egg, placing it carefully on top. Then, gently slide everything from the plate onto a hot skillet, ensuring that the egg is on the bottom and the meat is on top.
Step 8
Once the egg base is golden brown, flip the omelet and cook until fully done. Prepare the remaining omelets in the same way.
Step 9
Remove the leaves from the parsley sprig and chop them finely.
Step 10
Serve folded in half and sprinkle with herbs. You can fill the brioche with a filling, such as sautéed mushrooms or vegetables.
