Description
Sift the flour and cocoa together instead of separately, mixing and sifting the cocoa-flour mixture. If the top has formed a crust but the center is still moist, cover the top with foil and bake until a toothpick comes out clean. Regarding step 4: if the batter is very thick and difficult to mix, you can omit some of the flour and cocoa powder mixture.

- 70% Dark Chocolate - 6.3 oz
- Unsalted butter - 7.1 oz
- Sugar - 7.1 oz
- Brown Sugar - 1.8 oz
- Eggs - 3 pieces
- All-purpose flour - 3.5 oz
- Cocoa Powder - 1.8 oz
- Salt - ¼ teaspoon
- Orange zest - to taste
Step by Step guide
Step 1
Melt the chocolate with the butter in a double boiler.
Step 2
While the chocolate cools, whisk the eggs with the sugar (it's better to whisk by hand with a whisk, without overdoing it), then add the salt.
Step 3
Add the chocolate to the eggs and mix well.
Step 4
Sift the flour and cocoa powder into the mixture.
Step 5
Line the bottom of the pan with parchment paper, pour the batter into the pan. Bake at 356°F for 40–60 minutes depending on your oven.
Step 6
Let the brownies cool for 15 minutes, otherwise they will crumble.
