Description

If you fry pancakes with constant additions of oil, it's better to use more flour, so your pancakes won't spread in the oil and will form a golden and crispy crust. In case of using oil to prevent burning, the dish will be softer with less flour. Another good tip is to add a lot of vegetable oil to the batter itself, approximately 10–15 ml.

Ingredients

  • Kefir - 7 fl oz
  • Water - 7 fl oz
  • Wheat Flour - 7.1 oz
  • Baking Powder - 0.2 oz
  • Sugar - 2.5 oz
  • Vanilla salt - 0.4 oz

Step by Step guide

Step 1

In a bowl, add in order: kefir, water, sugar, and vanilla sugar. Mix everything until a not very thick mass is formed.

Step 2

Gradually add flour with baking powder; you may need less or more flour depending on what you want from the pancakes and the frying method (see note).

Step 3

Heat the frying pan well so that it is hot but not smoking!! For electric stoves, set to 6–7, for gas stoves, reduce the heat to medium, but closer to high.

Step 4

Spoon the batter onto the frying pan (with or without oil) using a small ladle or spoon, flip them when dots appear on the pancakes (I flip them with a spatula using a spoon or fork, this way the pancakes don't spread and are easier to turn).

Step 5

Serve with whatever your heart desires! In the photo, served with apples sprinkled with cinnamon and drizzled with lemon, sour cream, and honey (which miraculously appeared in the apartment, I couldn't miss the chance).
