Ingredients
- Chicken Egg - 4 pieces
- Sweet Pepper - 1 piece
- Onion - 1 piece
- Garlic - 2 cloves
- Tomatoes - 2 pieces
- Feta cheese - 7.1 oz
- Olive Oil - 3 spoons
- Salt - to taste
- Herbs - ½ bunches
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Sauté the onion in olive oil. I like to add a bit of butter for extra flavor. The onion should cook over low heat until it becomes soft and sweet, just like everything else you will add afterwards.
Step 2
Later, add the sweet pepper and wait for everything to cook through, then add the tomatoes, chopped either finely or coarsely, according to preference. When the juice turns orange, add the minced garlic. You can season with salt.
Step 3
While this mixture sits for a minute or two, mix the eggs with the feta cheese and ground pepper. If the cheese isn't salty enough, feel free to add some salt! Pour this mixture over the fragrant vegetables and stir!
Step 4
As soon as the eggs are ready, sprinkle a generous amount of herbs on top! And since the name of this dish generally means 'a mix', feel free to add in anything you love and however you like! You can add zucchini or potatoes to make it even heartier.
