Ingredients

  • Tortillas - 4 pieces
  • Large eggs - 4 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Olive Oil - 1 teaspoon
  • Canned Jalapeño Peppers - 4.2 oz
  • Fajitas sauce - 2 cups
  • Sour Cream - 2½ tablespoons
  • Cheshire Cheese - 2.1 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Wrap the tortillas in foil and heat for 5–7 minutes.

Step 2

In a small bowl, beat the eggs with salt and pepper.

Step 3

In a skillet, heat the olive oil. Add the finely chopped chili peppers and sauté for a minute. Then pour in the beaten eggs and cook, stirring gently, until set.

Step 4

Place the eggs on the warmed tortillas, sprinkle with grated cheese, and roll tightly.

Step 5

Serve with salsa and sour cream.
