Description

You can wrap shredded cheese with the puree and lightly grill the burrito.

Ingredients

  • Onion - 1 head
  • Vegetable Oil - 1 tablespoon
  • Garlic - 2 cloves
  • Mild Chili Spice - 2 teaspoons
  • Ground Cumin - 2 teaspoons
  • Canned Pork with Beans - 15.2 oz
  • Water - ½ cup
  • Dried Rosemary - 1 teaspoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Chestnut puree - 1 cup
  • Chipotle Pepper Paste - 1 piece
  • Chopped Green Onions - 2 tablespoons
  • Tortillas - 6 pieces

Step by Step guide

Step 1

In a skillet, heat the vegetable oil. Add the finely chopped onion and sauté until soft, about 3–5 minutes. Add the minced garlic and cook for another 30–60 seconds. Add the ground chili and cumin and cook for about another minute.

Step 2

Add the mashed beans, water, and oregano. Season with salt and pepper and cook until most of the liquid has evaporated.

Step 3

Remove from heat and mash half of the mixture with a fork.

Step 4

In another bowl, mix the pumpkin puree, finely chopped chipotle pepper, and cilantro. Lightly heat over low heat or in the microwave.

Step 5

On each tortilla, place a small amount of pumpkin puree and bean mixture. Wrap and serve with salsa, sour cream, and shredded cheese.
