Description
A pie recipe inspired by a classic dish. The pie is delicious both hot and cold.
Ingredients
- Butter - 7.1 oz
- Milk - 16 fl oz
- Sugar - 7 tablespoons
- Wheat Flour - 17.6 oz
- Dry yeast - 0.2 oz
- White Cabbage - 2 lbs
- Chocolate eggs - 4 pieces
- Salt - 1 tablespoon
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Take the butter out of the refrigerator in advance — it should be soft. Chop the butter and two cups of flour into crumbs, then knead with your hands until it reaches a dough-like consistency.
Step 2
Warm one cup of milk, add sugar and yeast, and mix well until fully dissolved.
Step 3
Combine this mixture with the flour and chopped butter, then add another two cups of flour and salt. Knead the dough until it becomes elastic and greasy, and pulls away from your hands.
Step 4
Cover the bowl with a towel and let it rise for about one and a half hours.
Step 5
Boil the eggs, cool them, peel, and set aside.
Step 6
Boil water in a kettle.
Step 7
Shred the cabbage, salt it, squeeze out excess moisture, place it in a pot, pour boiling water over it, and let it sit for 30 minutes. Then drain the water, melt one tablespoon of butter and one tablespoon of olive oil in a pan, add the cabbage, stir, pour in one cup of milk, salt, and simmer covered for about 30 minutes, stirring occasionally. When all the milk evaporates and the cabbage starts to brown slightly, turn off the heat, taste for salt, and let it cool slightly.
Step 8
If the dough has risen, divide it into two parts. Grease a baking sheet with oil. Sprinkle flour on a board, roll one half of the dough in flour, and roll it out with a floured rolling pin. Use the rolling pin to transfer the dough to the baking sheet (roll it onto the pin, then unroll it onto the sheet). Shape it with your hands to fit the baking sheet, creating a bottom and sides. Fill with as much cabbage as you can, crumble the eggs on top, and cover with a lid made from the second half of the dough. You can cut out decorative shapes from the leftover dough to adorn the pie lid. Then, use a fork or toothpick to poke holes in the lid.
Step 9
Let the pie rise for about 15 minutes before placing it in a well-heated oven. The temperature should be 320°F. Baking time will vary depending on the oven; in my gas oven without a fan, it takes about 40 minutes, while in an electric oven with a fan, it takes 15–20 minutes. Five minutes before the end of the baking time, take the pie out of the oven and brush the surface with a yolk beaten with sugar and milk.
