Ingredients
- Wheat Flour - 9.9 oz
- Butter - 6 oz
- Sugar - 8.1 oz
- Cottage cheese - 28.2 oz
- Chicken Egg - 3 pieces
- Potato protein - 1.4 oz
- Vanillin - a pinch
- Cognac - 0 oz
- 70% Dark Chocolate - 8.1 oz
- 10% cream - 7.1 oz
- Sour Cream - 8.8 oz
Step by Step guide
Step 1
Knead the dough. Combine the flour, softened butter, and 50 grams of sugar.
Step 2
Line the bottom of a springform pan with parchment paper.
Step 3
Spread the dough and shape the edges all the way up to the top of the pan.
Step 4
Prepare the chocolate filling. Break the chocolate into pieces, pour the cream over it, and place it in the microwave on full power for 1 minute. Remove it and, stirring continuously, achieve a smooth consistency. Add the brandy. Chill in the refrigerator for about 5 minutes.
Step 5
Pour over the dough in the mold. Place in the freezer for 20 minutes. This is necessary for the chocolate layer to set and not spread when adding the cheese filling.
Step 6
For the cheese filling, mix the cottage cheese, 130 grams of sugar, eggs, starch, and vanilla using a mixer.
Step 7
Spread the cottage cheese filling over the chocolate layer. Smooth it out. Place in a preheated oven at 356°F for one hour.
Step 8
Prepare the sour cream sauce. Mix the sour cream with the remaining 50 grams of sugar and set aside until the sugar is completely dissolved.
Step 9
After an hour, take the cake out of the oven (do not turn off the oven) and pour over the sour cream topping.
Step 10
Place in the oven for 10–15 minutes. Remove and let it cool completely, then dust with cocoa powder.
