- Chicken Egg - 8 pieces
- Jerusalem Artichoke - 3 fl oz
- Olive Oil - 3 fl oz
- Wheat Flour - 12.3 oz
- Corn Flour for Polenta - 1.8 oz
- Orange zest - 2 spoons
- Raisins - 5.3 oz
- Vanilla Pod - 1 piece
- Baking Powder - 0.4 oz
- Salt - a pinch
Step by Step guide
Step 1
Heat olive oil in a saucepan along with a halved vanilla pod. Allow it to cool and infuse so that the oil absorbs the vanilla aroma.
Step 2
In the mixing bowl, crack the eggs and add the syrup made from Jerusalem artichoke, mixing until smooth. While continuing to mix, gradually pour in the cooled olive oil with a hint of vanilla, and mix for another three minutes. Add the sifted flour along with the baking powder and a pinch of salt. Mix until well combined, then fold in the small golden raisins and zest.
Step 3
Pour the batter into a greased cake pan and place it in the oven preheated to 374°F for about thirty to thirty-five minutes. Allow the finished cake to cool.
