Canadian Pork Pie (Tourtière)
Ingredients
- Boneless pork shoulder - 2 lbs
- Onion - 1 piece
- Dried Chamomile - 1 teaspoon
- Breadcrumbs - 6 tablespoons
- Ground Cinnamon - ½ teaspoon
- Ground clove - a pinch
- Olive Oil - to taste
- Salt - a pinch
- Shortcrust Cake Mix - 21.2 oz
- Whole egg - 1 piece
- Chicken Broth - 8 fl oz
- 33% Cream - 1 tablespoon
Step by Step guide
Step 1
Finely chop the meat into minced meat with a knife (do not grind it in a meat grinder!).
Step 2
Dice the onion. Sauté in oil until golden. Add the meat and fry on high heat for 10 minutes.
Step 3
Pour in the broth, add thyme and salt. Simmer covered on low heat for 20 minutes. Remove from heat, add 2 tablespoons of breadcrumbs, cinnamon, and cloves.
Step 4
Divide the dough into 3 parts. Form the bottom of the pie from two parts in a greased baking dish.
Step 5
Sprinkle the dough with the remaining breadcrumbs, add the meat filling. Cover with the remaining dough, pinch the edges, and make a hole in the center.
Step 6
Insert a parchment tube into the hole, brush the pie with the yolk mixed with cream.
Step 7
Bake at 392°F for 10 minutes, then at 320°F for 25 minutes.
