Ingredients
- Kumquat - 2 lbs
- Sugar - 14.1 oz
- Water - 1 qt
- Brandy - 8 fl oz
- Vanilla Pod - 2 pieces
Step by Step guide
Step 1
Pierce each kumquat in several places with a knife to prevent them from bursting during cooking. Transfer to a pot and cover with water. Bring to a boil and cook for 1 minute. Drain and cool.
Step 2
In a pot, combine sugar and water, bring to a boil, and stir until the sugar dissolves.
Step 3
Add kumquats and simmer on low heat for 10 minutes.
Step 4
Using a slotted spoon, transfer kumquats to sterilized jars. Pour 60 ml of brandy into each jar and fill to the top with syrup, leaving about 1 cm of space.
Step 5
Place a vanilla pod in each jar and seal tightly.
