  • Wheat Flour - 17.6 oz
  • Sugar - 1.8 oz
  • Powdered Sugar - 3.5 oz
  • Chocolate - 1.8 oz
  • Salt - a pinch
  • Lard - 1.8 oz
  • Ricotta cheese - 14.1 oz
  • Red Grape Juice - 7.1 oz
  • Pistachios - 1.8 oz

Step by Step guide

Step 1

Combine 500 g of all-purpose flour, 50 g of granulated sugar, a pinch of salt, and mix in a mixing bowl with a paddle attachment. Add 50 g of lard to the dry ingredients and mix on low speed until crumbly. Gradually pour in 200 g of red wine and mix again.

Step 2

Wrap the dough in plastic wrap and refrigerate for 30-50 minutes. Roll out the chilled dough into long strips. Cut out circles from the dough using a special cutter.

Step 3

For the filling, add a pinch of salt and 100 g of powdered sugar to 400 g of ricotta cheese and mix with a whisk. Chop 50 g of dark chocolate, reserving some for decoration, and also chop 50 g of pistachios. Add candied fruit, chopped chocolate, and pistachios to the ricotta and mix well. Transfer the filling to a pastry bag and refrigerate.

Step 4

For decoration, melt white and dark chocolate separately in a water bath. You can add a little vegetable oil. Dip one end of the cooled tubes in the melted white chocolate and place them on plastic wrap. Put the tubes with white chocolate in the freezer for a few minutes.

Step 5

Dip the other end of the tubes in the melted dark chocolate and place them on plastic wrap. Put the tubes with chocolate in the freezer for a few minutes.

Step 6

Fill the tubes with the chilled filling. Dip the tube with the dark chocolate end in candied orange peel and the white chocolate end in crushed dark chocolate.
