Cantucci with Almonds and Candied Fruits
Ingredients
- Egg white - 2 pieces
- Sugar - 5.3 oz
- Citrus Zest Mix - 1 piece
- Butter - 1.8 oz
- Wheat Flour - 9.5 oz
- Baking Powder - 0.1 oz
- Whole egg - 1 piece
- Cognac - 4 tablespoons
- Chopped almonds - 1.8 oz
- Raisins - 1.8 oz
- Dried ground orange peel - 1.8 oz
Step by Step guide
Step 1
Beat the eggs with sugar.
Step 2
Add the lemon zest.
Step 3
Pour the cognac into the egg mixture.
Step 4
Sift the flour and baking powder into a bowl.
Step 5
Add the softened butter to the dough and knead until smooth. The dough should not be too sticky. If needed, add a little more flour.
Step 6
Add the raisins.
Step 7
Chop the almonds with a knife and add them to the dough.
Step 8
Cut the candied fruits into small pieces and add them to the bowl.
Step 9
Knead the dough, cover with plastic wrap, and refrigerate for 30 minutes.

Line a baking sheet with parchment paper.

Divide the dough into four equal parts, roll out four logs about 3 cm wide and 1–2 cm thick, and place them on the parchment.

Brush the dough with egg yolk to brown during baking.
Step 13
Place the baking sheet in a preheated oven at 392°F and bake for 30 minutes.
Step 14
Let cool slightly, but while the dough is still warm, cut into 1 cm wide pieces.
Step 15
Arrange on the baking sheet and dry in the oven for another 10–15 minutes.
