Caramel Chocolate Pie

Ingredients

  • Wheat Flour - 1½ cups
  • Cocoa Powder - 2 tablespoons
  • Salt - a pinch
  • Butter - 16 tablespoons
  • Sugar - 2 cups
  • Egg white - 2 pieces
  • Vanilla extract - ½ teaspoon
  • Honey - 3 tablespoons
  • Sour Cream - 1 tablespoon
  • Cream 22% - 1 cup
  • Liquid dark chocolate - 3.5 oz

Step by Step guide

Step 1

For the crust: Preheat the oven to 392°F. In a bowl, mix the flour, cocoa powder, and salt, and set aside. In a large bowl, beat 10 tablespoons of softened butter and 0.5 cups of sugar with a mixer until smooth; add the egg yolks and vanilla to the mixture. Incorporate the prepared flour and cocoa mixture.

Step 2

In a round, fluted 22 cm diameter mold, place the dough and evenly distribute it across the mold. Refrigerate for 30 minutes. Remove from the refrigerator, prick with a fork, and place in the oven. Bake until done, about 20 minutes. Remove the baked crust from the oven and let it cool.

Step 3

Make the caramel. To do this, combine 1.5 cups of sugar, honey, salt, 6 tablespoons of water in a saucepan and bring to a boil. Slightly reduce the heat and cook, without stirring, until golden brown. Remove the saucepan from the heat and add 6 tablespoons of butter, 6 tablespoons of cream, and sour cream to the hot syrup. Stir thoroughly until smooth. Pour the caramel into the cooled pie mold and let it cool. Then refrigerate for 4–5 hours until fully set.

Step 4

Make the ganache. To do this, bring 0.5 cups of cream to a boil. Turn off the heat and add the chopped chocolate bar to the hot cream. Let it sit for 1 minute, then slowly stir until smooth. Pour the chocolate ganache evenly over the pie and refrigerate for a few more hours until the chocolate is set.
