Caramel Feijoa Jam
Ingredients
- Feijoa - 17.6 oz
- Sugar - 1 cup
- Water - 17 fl oz
- Brandy - 1 tablespoon
Step by Step guide
Step 1
Wash the feijoa and peel off the skin. Do not discard the skin. Place the peeled berries in a bowl of cold water to prevent browning.
Step 2
Place a skillet over high heat and evenly sprinkle 0.5 cups of sugar. Keep on heat until most of the sugar turns into reddish caramel. Shake the skillet frequently to move the dry sugar into hotter areas. Do not let the caramel darken too much or burn! Remove the skillet with the caramel from the heat.
Step 3
After 20–30 seconds, when the caramel cools slightly, pour in boiling water. Caution! Do not pour water into boiling caramel, as it can cause burns from splattering droplets. Add the feijoa skins to the skillet. Bring to a boil, reduce the heat, and simmer while stirring for 5–7 minutes, until the caramel is completely dissolved.
Step 4
Strain the syrup through a sieve into a pot for making jam. Add the remaining half cup of sugar and the feijoa. Bring to a boil over high heat. Then reduce the heat to medium and cook uncovered for 30–40 minutes.
Step 5
If the berries are not fully covered with syrup, stir the jam every 10 minutes, pushing the top berries down. Taste the syrup. If desired, adjust the flavor of the syrup with sugar or lemon juice.
Step 6
Three minutes before the cooking is finished, pour one tablespoon of brandy into the jam. Pack the jam into sterilized jars, seal tightly, and wrap in a warm blanket.
