Ingredients
- 3.2% Milk - 7 fl oz
- 10% cream - 7 fl oz
- Sugar - 3.1 oz
- Salt - a pinch
- Corn Starch - 3 teaspoons
- Semi-soft cream cheese - 1.8 oz
- Snickers - 2.1 oz
Step by Step guide
Step 1
Heat a large heavy-bottomed skillet (the larger the surface area, the thinner the layer of sugar will be, which will make the caramelization process more visible). Pour the sugar onto the dry surface and caramelize it over low heat. Once the bottom layer of sugar becomes liquid, gently mix it with the still solid top layer of sugar, continuing until all the sugar has melted.
Step 2
Caramelize the melted sugar over very low heat, stirring, until it takes on a bronze hue; do not overcook, and remove from heat. Carefully pour in the room temperature cream into the caramel, stirring vigorously to fully combine the two substances.
Step 3
The combination of hot caramel and cold cream will create a sizzling and splattering effect, so be cautious. If the caramel does not fully mix with the cream and hardens into separate segments, return the skillet to the heat and cook, stirring, until the caramel completely dissolves into the cream.
Step 4
Dissolve the cornstarch in 50 ml of milk and let it sit for a couple of minutes.
Step 5
In the skillet with the caramel-cream mixture, add the remaining milk and a pinch of salt, stir, and bring the mixture almost to a boil. Pour in the cornstarch milk and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese, and mix until smooth. Allow to cool to room temperature, then refrigerate overnight.
Step 6
Pour the resulting mixture into an ice cream maker and freeze according to the instructions, adding chopped mini Snickers bars. Transfer the finished ice cream to a container and place it in the freezer for at least 4 hours before serving.
Step 7
If you do not have an ice cream maker, immediately transfer the ice cream to a container, place it in the freezer, and stir the contents every 20-30 minutes until fully frozen. Garnish the ice cream with Snickers pieces just before serving.
