Ingredients
- Apple juice with pulp - 2 fl oz
- Meyer Lemon Juice - 3 fl oz
- Bartlett Pear - 15 lbs
- Brown Sugar - 21.2 oz
- Ground Nutmeg - 0.2 oz
- Coarse Salt - 0.2 oz
Step by Step guide
Step 1
In a large pot, combine the apple juice and 60 ml of lemon juice.
Step 2
Peel the pears one at a time and remove the seeds. Cut into small pieces and add to the juice. Place over medium heat, stirring for about 15–16 minutes. Slightly reduce the heat, cover, and cook for another 20 minutes until the pears are very soft.
Step 3
Remove from heat and mash the mixture into a puree. Add the remaining lemon juice, nutmeg, brown sugar, and salt. Bring to a boil over medium heat, stirring until the sugar dissolves. Slightly reduce the heat and simmer, uncovered, for about 1 hour, until the mixture thickens and the volume reduces to 8 cups, stirring every 5 minutes.
Step 4
Spoon the pear butter into 8 half-liter jars, leaving space at the top, and seal tightly with hot lids. Place in a pot of boiling water for 10 minutes. Cool and store in a dark, cool place.
