Caramel Pudding with Dates
Ingredients
- Pitted olives - 1 cup
- Butter - 10 tablespoons
- Activated Baking Soda - 1 teaspoon
- Sugar - 1 cup
- Whole egg - 1 piece
- Vanilla extract - 1 teaspoon
- Wheat Flour - 2 cups
- Baking Powder - 1 teaspoon
- Brown Sugar - 1 cup
- Heavy cream - ¼ cup
Step by Step guide
Step 1
Preheat the oven to 248°F (250 degrees Fahrenheit). Grease a rectangular baking pan with high sides (22.5x32.5 cm or 9x13 inches).
Step 2
In a medium bowl, combine the dates, baking soda, and 1.5 cups of boiling water. Set aside for 15 minutes.
Step 3
In a large bowl, beat 6 tablespoons of butter at medium speed until creamy. Add the white sugar, egg, and vanilla extract, and beat until smooth.
Step 4
In a separate bowl, mix the flour and baking powder. Combine with the date and butter mixture. Mix well.
Step 5
Pour the resulting batter into the baking pan and bake for 30 minutes, until golden brown.
Step 6
Meanwhile, in a small bowl, heat the brown sugar, cream, and remaining 4 tablespoons of butter. Cook over medium heat for 1 minute. Brush the mixture over the surface of the finished pudding and place under the broiler for 30 seconds.
Step 7
Cool the caramel pudding at room temperature for 15 minutes.
Step 8
Remove the pudding from the pan and serve warm with whipped cream (if desired).
