- Star anise - a pinch
- Puff Pastry - 1.8 oz
- Apple - 1 piece
- Pear - 1 piece
- Cherry - 1.1 oz
- Sugar - 1.1 oz
- Ground clove - a pinch
- Light Raisins, Seedless - 0.7 oz
- Grated Ginger Root - a pinch
- Butter - to taste
- Citrus Zest Mix - to taste
- Olive Oil - to taste
- Vanilla salt - to taste
- Rum - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Powdered Sugar - to taste
- Raspberry gin - to taste
- Herbs - to taste
- Cinnamon - 1 piece
- Balsamic Vinegar - to taste
Step by Step guide
Step 1
Heat olive oil and butter in a skillet, frying the puff pastry disc over high heat on both sides until golden brown.
Step 2
Sprinkle the pastry with powdered sugar and place it in a preheated oven at 428°F for 3–4 minutes.
Step 3
Prepare the caramel by adding 30 g of sugar, a pinch of cloves, star anise, a cinnamon stick, and vanilla to a heated dish. Stir occasionally until a homogeneous mixture is achieved.
Step 4
Peel the pear and apple, removing the skin and core, and cut them into equal wedges.
Step 5
Place the fruits in the skillet with the caramel, add 1 tablespoon of butter, raisins, and sauté over high heat, stirring, until the fruits start to release their juice.
Step 6
Add 2 tablespoons of cherries, a pinch of ginger, lemon zest, a little salt (less than a pinch), and pepper. Stir and pour in 50 ml of rum. Remove from heat and place in a preheated oven at 428°F for 5–6 minutes.
Step 7
Transfer the pastry disc to a plate, top with the caramelized fruits. Garnish with herbs, sprinkle with lemon zest, and drizzle with a little raspberry syrup and balsamic vinegar.
