Ingredients

  • Lemon - 1 piece
  • Sugar - 7.1 oz

Step by Step guide

Step 1

Pour ice water into a large bowl and set aside.

Step 2

Using a mandoline, thinly slice the lemon into approximately 12 slices.

Step 3

In a pot, bring water to a boil. Remove from heat and add the lemon slices. Let them sit for 1 minute to soften. Then immediately transfer to the ice water. Pat dry well.

Step 4

In a pot, bring sugar with 200 g of water to a boil, stirring until the sugar dissolves. Add the lemon slices (preferably in a single layer) and simmer gently, avoiding a vigorous boil, for about 1 hour, until the lemons become transparent.

Step 5

Transfer to a baking sheet lined with parchment paper and lightly dry until serving.
