Caramelized Pear

Ingredients

  • Chicken Egg - 2 pieces
  • Sugar - 5.3 oz
  • Wheat Flour - 3.5 oz
  • Pear - 1 piece
  • 10% cream - 7 fl oz
  • Dr. Oetker Cream Stabilizer - 2 teaspoons
  • White Chocolate - 0.7 oz
  • Powdered Sugar - 1.1 oz
  • Walnuts - 0.7 oz
  • Cinnamon - 1 teaspoon
  • Kefir - 5 tablespoons
  • Nutmeg - a pinch

Step by Step guide

Step 1

Separate the egg whites from the yolks. Beat them separately, adding 45 grams of sugar to each. Combine them, gently mixing.

Step 2

Add the sifted flour gradually, not all at once! Also mix gently — you should hear a 'lightness' sound while mixing, just don't overdo it. Add the chopped walnuts, cinnamon, nutmeg, and kefir.

Step 3

Place the batter into a piping bag and pipe out 4 round 'puffs'.

Step 4

Put them in an oven preheated to 374°F and bake for about 10-15 minutes until golden.

Step 5

Peel the pear, remove the seeds, and cut it into small slices.

Step 6

In a pan, add the remaining sugar (60 g); when it melts completely, add the pear — it should be fully covered in syrup.

Step 7

Whip the cream at medium speed with powdered sugar and cream stabilizer — the cream will be ready in a couple of minutes.

Step 8

Once the puffs cool down, pipe in the cream and refrigerate for 15 minutes.

Step 9

The remaining syrup in the pan can be used for decoration. On parchment paper, make thin sticks and refrigerate; after about 15 minutes, they can be removed — you'll have caramel sticks for decoration.

Step 10

Take out the puffs and place a couple of pear slices on top, decorate with caramel sticks, and sprinkle with white chocolate.
