Description

You can substitute walnuts with pecans. Sour cream can be replaced with heavy cream. You can add ginger to the spices. Designed for a 20 cm diameter pan.

Ingredients

  • Butter - 3.5 oz
  • Eggs - 3 pieces
  • Sugar - 5.3 oz
  • Brown Sugar - 4.2 oz
  • Carrots - 8.8 oz
  • Walnuts - 3.5 oz
  • Applesauce - 5.3 oz
  • All-purpose flour - 6.3 oz
  • Baking Powder - 1 teaspoon
  • Baking Soda - ½ teaspoon
  • Cinnamon - 1 teaspoon
  • Cream Cheese - 10.6 oz
  • Sour Cream 25% - 3.5 oz
  • Powdered Sugar - 5.3 oz

Step by Step guide

Step 1

Grate the carrots using a fine grater. Chop the walnuts with a knife or in a blender, but not too finely.

Step 10

Remove the pan from the oven, cut the cake in half horizontally. Allow the layers to cool.

Step 11

Assemble the cake: spread frosting on the bottom layer, place the second layer on top, and add more frosting. You can decorate the top with nuts and fresh berries.

Step 2

Prepare the baking pan: grease with butter and dust with flour.

Step 3

Melt the butter (for the batter - 150 grams) and let it cool.

Step 4

Beat the eggs with brown and white sugar.

Step 5

Mix the cooled butter from step 3 into the eggs and beat again.

Step 6

Combine the flour, baking soda, baking powder, and cinnamon. Sift into the mixture from step 5 and mix again.

Step 7

Add the walnuts, carrots, and applesauce - mix everything together.

Step 8

Pour into the pan. Place in the oven. Bake at 356°F for about an hour.

Step 9

While the cake is baking, prepare the frosting: Mix the cream cheese and sour cream until smooth. Add softened butter and powdered sugar - mix well.
