Ingredients
- Sugar - ½ cup
- Eggs - 3 pieces
- Carrot - 5.3 oz
- All-purpose flour - 1 cup
- Baking Powder - 1½ teaspoons
- Lemon - 1 piece
- Sour Cream - 8.8 oz
- Dried Fruits - to taste
Step by Step guide
Step 1
The volume of a cup is 250 ml.
Step 2
Grate the carrot on a fine grater and squeeze out the juice.
Step 3
Beat the eggs with sugar until frothy.
Step 4
Mix in the carrot, flour, and baking powder. Chop and add any dried fruits.
Step 5
Grease the baking pan with oil (or line it with parchment paper) and pour in the batter. Place it in a preheated oven at 180 °C (350 °F) for 30 minutes (check the cake's readiness with a toothpick). Remove the cake from the oven and let it cool.
Step 6
Prepare the cream: take the lemon, which should be boiled in a large amount of water (to remove bitterness), cut it in half and remove the seeds. Pass it through a meat grinder or grate it, and mix with sour cream. Whip the mixture. If you don't have the desire or time to do this, you can simply squeeze the lemon juice.
Step 7
Divide the cooled cake into two layers, spread with cream, and stack them. Leave overnight to allow the cake to soak.
