- Raisins - 3.5 oz
- Wheat Flour - 6.2 oz
- Citrus Zest Mix - 0.1 oz
- Baking Powder - 0.4 oz
- Ground Cinnamon - 0.1 oz
- Ground Nutmeg - 0.1 oz
- Meyer Lemon Juice - 1 fl oz
- Powdered Sugar - 6.2 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a baking dish with vegetable oil and line it with parchment paper.
Step 2
Combine the sugar, butter, and eggs, and lightly beat them together. Add the grated carrots, raisins, and lemon zest. Mix the flour, spices, and baking powder together. Combine all the ingredients. The batter should be soft and almost liquid.
Step 3
Pour the batter into the prepared pan and bake for 40-45 minutes.
Step 4
Glaze: whip together lemon juice and powdered sugar until thick.
Step 5
