Description
Carrot Cake with Orange Zest
Ingredients
- Sugar - 6.2 oz
- Safflower Oil - 5 fl oz
- Farm fresh eggs - 3 pieces
- Raisins - 3.5 oz
- Orange zest - 1.4 oz
- Wheat Flour - 6.2 oz
- Ground Cinnamon - 1 tablespoon
- Ground Nutmeg - ½ tablespoon
- Activated Baking Soda - 1 tablespoon
- Orange juice concentrate - 2 tablespoons
- Powdered Sugar - 5.3 oz
- Carrot - 4.9 oz
Step by Step guide
Step 1
Preheat the oven to 356°F, grease the baking pan with oil, and line it with parchment paper.
Step 2
Combine sugar, oil, and eggs. Lightly beat, then add the zest of one orange, grated carrot, and raisins.
Step 3
Mix the flour, baking soda (not activated — the taste of soda will not be present), spices, and sift into the prepared batter. The batter should be almost liquid.
Step 4
Bake for 40–45 minutes, then cool on a rack (to prevent the bottom from getting soggy).
Step 5
Whip the ingredients for the glaze (to the consistency of liquid cream) and pour over the cake.
