Step by Step guide
Step 1
In one bowl, combine all the liquids: eggs, oil, and pineapples. The pineapples are considered liquid because they are used along with their juice. First, drain the juice, then mash the pulp directly in the can.
Step 2
In another bowl, mix the dry ingredients: flour, baking powder, sugar, vanilla sugar, grated carrots, chopped nuts, and raisins.
Step 3
Combine the contents of the two bowls, mix until smooth, and pour the batter into the molds. Bake at 356°F for twenty-five minutes. Decorate the finished muffins with mascarpone using a piping bag.
