Carrot Muffins with Goji Berries
Ingredients
- Wheat Flour - 4.9 oz
- Chocolate eggs - 3 pieces
- Baking Powder - 1 teaspoon
- Vegetable Oil - 3 fl oz
- Carrot - 12.3 oz
- Activated Baking Soda - ¼ teaspoon
- Ground Nutmeg - a pinch
- Goji Berries - 3.5 oz
- Grated Ginger Root - ¼ teaspoon
- Cinnamon - a pinch
- Sugar - 3.5 oz
- Citrus Zest Mix - ½ teaspoon
Step by Step guide
Step 1
Mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and ground ginger.
Step 2
Beat 3 egg yolks with 50 g of sugar, gradually adding the vegetable oil.
Step 3
Grate the carrot on a fine (elongated) grater (not into a puree!). Grind one portion of the goji berries, and soak the remaining ones in a small amount of boiling water to rehydrate. Combine the carrot and goji berries with the beaten yolks mixed with vegetable oil and sugar. Mix the prepared mixture with the dry ingredients.
Step 4
Whip 3 egg whites until soft peaks form, gradually adding 50 g of sugar. Gently fold the egg whites into the batter.
Step 5
Divide the batter into molds (in my case, silicone). Bake in a preheated oven at 200°C for 25-30 minutes. The muffins will be a bright orange color, with a pleasant spicy aroma and a tender texture.
