- Vegetable Oil - 3 fl oz
- Sugar - 5.3 oz
- Wheat Flour - 4.4 oz
- Natural Yogurt - 3 fl oz
- Baking Powder - ¼ teaspoon
- Activated Baking Soda - ¾ teaspoon
- Cinnamon - ¼ teaspoon
- Carrot - 5.3 oz
- Grated Ginger Root - ¼ teaspoon
- Oranges - ½ piece
- Raisins - 3.5 oz
Step by Step guide
Step 1
Grate the carrot (150 grams usually comes from one large carrot or two small ones). Grate the zest and squeeze the juice from half an orange.
Step 2
In a large bowl, mix yogurt, sugar, vegetable oil, and orange juice. Sift in the flour with baking powder and baking soda, add the spices, and mix until smooth. Add the grated carrot, orange zest, and raisins, and mix again.
Step 3
Preheat the oven to 356°F; fill paper cupcake liners about two-thirds full with the batter and bake for 25–30 minutes.
Step 4
The finished cupcakes can be decorated with buttercream (mix any cream cheese until smooth with powdered sugar) or drizzled with sugar glaze.
