Caterpillars with Raisins
Ingredients
- Milk - 7 fl oz
- Butter - 2.1 oz
- Wheat Flour - 17.6 oz
- Sugar - 1.1 oz
- Dry yeast - 0.2 oz
- Vanilla salt - 0.3 oz
- Citrus Zest Mix - 1 tablespoon
- Salt - to taste
- Chicken Egg - 1 piece
- Egg white - 1 piece
- Whole egg - 1 piece
- Raisins - 3.5 oz
Step by Step guide
Step 1
Heat the milk in a small saucepan and melt the butter in it.
Step 2
Thoroughly mix the flour with the yeast in a bowl. Add the other ingredients (flour, yeast, sugar, vanilla sugar, zest, salt, egg, and egg white), and using a hand mixer, mix first on low speed, then on high speed for about 5 minutes, until a smooth, homogeneous dough forms.
Step 3
Cover the dough and let it rise in a warm place until noticeably increased in size.
Step 4
Line a baking sheet with parchment paper. Preheat the oven to 356°F.
Step 5
Knead the dough on a lightly floured surface, then add the raisins. Roll the dough into a log, cut it into 8 equal pieces. Then cut each piece into 5 smaller pieces. Shape these pieces into balls and place them closely together on the baking sheet. Let the dough rise for 15 minutes.
Step 6
Mix the egg yolk with the milk and brush the surface of the dough with it. Insert 2 raisins into each caterpillar as 'eyes'. Place the baking sheet in the oven on the middle rack and bake for about 25 minutes.
Step 7
Once baked, transfer the pastries to a kitchen rack lined with parchment paper to cool.
