Description

This recipe was shared with us by the head chef of a popular American restaurant. Caviar pancakes, or caviar blinis, are mentioned in historical texts: "The caviar is beaten a lot, then strained through a fine sieve, and mixed with coarse flour, and they will become thick, like red pancakes, with three pancakes placed on a plate." Just in the middle of spring during fasting days, caviar from pike, carp, zander, and bream is caught. The caviar from these fish is strained and salted. Within a few hours, it can be used to make caviar pancakes and fritters. Nowadays, a simpler version of caviar pancakes is often prepared, adding eggs in addition to flour.

Ingredients

  • Pike Caviar - 21.2 oz
  • Butter - 3.5 oz
  • Shallot - 3 pieces
  • Sour Cream - 3.5 oz
  • Vegetable Oil - 2 spoons
  • Wheat Flour - 15.9 oz
  • Sugar - 1 tablespoon
  • Chicken Egg - 1 piece
  • Dry yeast - 0.4 oz
  • Milk - 13 fl oz
  • Water - 10 fl oz

Step by Step guide

Step 1

First, mix the milk, egg, 20 grams of melted butter, yeast, and sugar. Then, add the flour and stir thoroughly to avoid lumps. After about an hour and a half, gradually add water and knead the dough until it reaches the consistency of liquid sour cream.

Step 2

Gently but thoroughly fold the caviar into the pancake batter using a wooden spoon. If the batter does not reach the desired consistency for the fritters, gradually add a little more flour. After mixing, let the batter rest for another 15 minutes to allow it to rise with bubbles of carbon dioxide.

Step 3

Fry the caviar pancakes in a hot cast-iron skillet generously coated with vegetable oil. Use a wooden spoon to pour the batter onto the skillet, and after a minute, flip them to the other side. Brush the finished pancakes with butter and stack them to keep warm.

Step 4

Finely chop the onion. If the onion is too pungent, blanch it in boiling water after cutting, then immediately rinse it with cold water. The onion will lose some of its sharpness but will retain its freshness and crunch.

Step 5

Arrange a small stack of caviar pancakes on a plate, drizzle with sour cream, and sprinkle with onions.
