Description
Cheese blintzes invariably evoke associations with home warmth and comfort. However, in honor of a celebration, you can dress them up a bit. Just add raisins and orange zest to the filling, and your everyday blintzes will look truly festive.
Ingredients
- Chicken Egg - 2 pieces
- Salt - 1 tablespoon
- Water - 8 fl oz
- Milk - 8 fl oz
- Wheat Flour - 5.1 oz
- Vegetable Oil - 2 spoons
- Raisins - 1.8 oz
- Oranges - 1 piece
- Semi-soft cream cheese - 7.1 oz
- Sour Cream - 1 tablespoon
- Powdered Sugar - 1 tablespoon
Step by Step guide
Step 1
Beat the eggs with salt until frothy.
Step 2
Pour boiling water into the eggs while continuously whisking. The foam will double in size.
Step 3
Pour in the cold milk while keeping the mixer running.
Step 4
Finally, sift in the flour and add 2 tablespoons of vegetable oil. Mix well to avoid lumps, and then refrigerate the dough for 30 minutes.

Heat the crepe pan — for the first crepe, you can grease it with vegetable oil, while the subsequent ones can be cooked without it. Pour a little batter onto the pan and spread it evenly across the surface.
Step 6
Fry for about 2 minutes over medium heat, then flip and fry for another minute. Repeat this process with the remaining dough.
Step 7
Soak the raisins in boiling water to plump them up, then drain the water, squeeze out the excess moisture from the raisins, and dry them with paper towels.
Step 8
Grate the zest from the orange using a fine grater, being careful to avoid the white pith. Blend the cottage cheese until smooth. Mix the cottage cheese with sour cream, powdered sugar, raisins, and the orange zest.
Step 9
Place a small amount of cottage cheese filling on one edge of each pancake and roll it up into a tube.

Place the pancakes in a skillet with melted butter and fry on all sides until golden brown. Before serving, dust with powdered sugar.
