Cheese Cookies for Wine
Ingredients
- Wheat Flour - 3.5 oz
- Butter - 3.5 oz
- Edam Cheese - 3.5 oz
- Salt - ¼ teaspoon
- Chicken Egg - 1 piece
- Poppy seed paste - to taste
- Rosemary - to taste
- Toasted Sesame - to taste
Step by Step guide
Step 1
Add sifted flour, butter, and salt to a food processor with blades, or mix by hand on a work surface, and start to crumble.
Step 2
When the mixture is almost ready, add grated cheese and continue chopping.
Step 3
Transfer the mixture to a bowl and add 1 yolk at the very end.
Step 4
You will get a crumbly mixture that easily forms a ball. Wrap the ball in plastic wrap and refrigerate for about 20 minutes.
Step 5
Grease the baking sheet with melted butter and cool it (a film of cold butter will form). Divide the ball into 2 parts.
Step 6
Roll each part into a square of 20x20 cm, cut the square into 16 smaller squares of 5x5 cm, and then cut each square diagonally.
Step 7
Whisk the egg white.
Step 8
Brush all the triangles with the whipped egg white and sprinkle with whatever you have on hand. Fried onions, poppy seeds, sea salt, rosemary, or sesame seeds will work. Repeat the process with the second half of the dough.
Step 9
Preheat the oven to 170°C. Place the triangles on the baking sheet using a knife and bake for about 10 minutes.
Step 10
These cookies also pair well with beer. However, with cold dry wine, they are simply magnificent.
