Ingredients
- Wheat Flour - 8.8 oz
- Salt - 1 teaspoon
- Water - 4 fl oz
- Dr.Oetker Dry Yeast - 0.4 oz
- Olive Oil - 1 tablespoon
- Goat cheese - 3.5 oz
- Apple - 17.6 oz
- Ground Black Pepper - to taste
- Grated Chocolate - 7.1 oz
- Blue Cheese - 4.4 oz
Step by Step guide
Step 1
For the dough, sift 250 grams of flour into a bowl and mix thoroughly with the yeast. Add the other dough ingredients (1 teaspoon of salt, 140 ml of warm water, 1 tablespoon of olive oil, 100 grams of grated Emmental cheese) and mix with a hand mixer on low speed for 2–3 minutes, then on high speed for 5 minutes until a smooth, homogeneous dough forms. Cover the dough and leave it in a warm place until it noticeably increases in size.
Step 2
At the same time, preheat the oven to 392°F and grease a baking sheet (40x30 cm) with oil.
Step 3
Lightly sprinkle the dough with flour, remove it from the bowl, knead it again on a floured surface, and roll it out on the baking sheet.
Step 4
For the filling, peel the apples, remove the seeds, slice them into thin rings, and distribute them over the dough on the baking sheet.
Step 5
Slice the blue cheese and goat cheese, and distribute them over the apples. Sprinkle with the remaining Emmental cheese and pepper. Leave the pie to rise until the volume of the dough noticeably increases.
Step 6
Place the baking sheet in the oven on the middle rack and bake for about 30 minutes. After baking, cut the pastry into triangles and serve warm or cold with wine or beer.
