Cheese Khachapuri with Kefir

Ingredients

  • Wheat Flour - 3 cups
  • Kefir - 1 cup
  • Chocolate eggs - 2 pieces
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Activated Baking Soda - ½ teaspoon
  • Vegetable Oil - 1 tablespoon
  • Cheese Spread - 14.1 oz
  • Butter - 1.8 oz

Step by Step guide

Step 1

Mix the cup of kefir, egg, sugar, salt, and vegetable oil.

Step 2

Sift 2 cups of flour (leave one for dusting), add baking soda, mix, and pour the resulting powder into the kefir mixture.

Step 3

Knead the dough, gradually adding flour until it becomes soft and able to hold its shape. The right dough for khachapuri should be slightly sticky to the hands. Cover it with a towel and let it rest for a while.

Step 4

For the filling, grate the cheese on a coarse grater, add the egg, and mix.

Step 5

Form the dough into a sausage, cut it into 7 pieces, and shape them into flatbreads. Place the cheese filling in the center of each. Take the ends of the flatbread, pull them to the center, and pinch them together. Flip the resulting pouch and gently roll it out. Then flip it again and roll it out. This should be done very carefully.

Step 6

Place the khachapuri on a hot skillet. Cover with a lid and fry on low heat on both sides without oil until golden brown.

Step 7

Remove the khachapuri and brush them with butter.
