If you can't find dry cottage cheese, you can remove excess water from any cottage cheese by leaving it in a sieve in the refrigerator overnight. To ensure the dish turns out perfectly, it’s best to pass the cottage cheese through a fine sieve, which will make the pancakes uniform and prevent them from falling apart while frying. Another tip is to add semolina to the cheese mixture: it will hold each pancake together firmly. Berries in this recipe make for the perfect companion: they balance the sweetness of the pancakes and add the necessary tang.

  • Cottage cheese - 17.6 oz
  • Chicken Egg - 1 piece
  • Sugar - 2 spoons
  • Semolina - 2 spoons
  • Salt - a pinch
  • Vanillin - 0 oz
  • Wheat Flour - to taste
  • Vegetable Oil - 1 fl oz
  • Fresh Berries - 1.1 oz
  • Butter - to taste
  • Powdered Sugar - to taste

Drain the cottage cheese through a cheesecloth to remove excess liquid if it is not dry enough. Then blend it in a blender for a smoother texture for the cheese pancakes.

Add an egg, sugar, a pinch of salt, and vanilla to the cottage cheese, and mix well.

Add semolina, stir again, and let it sit for 10–15 minutes to allow the semolina to swell.

In a skillet, heat vegetable and butter.
