- Chicken Egg - 2 pieces
- Semi-soft cream cheese - 17.6 oz
- Sugar - 6 tablespoons
- Salt - a pinch
- Baking Powder - ½ teaspoon
- Oat flakes - 0.7 cups
- Frozen Raspberries - 10.6 oz
- Lemon - 1 piece
- Powdered Sugar - to taste
Step by Step guide
Step 1
Whisk the cottage cheese, eggs, salt, and 3 tablespoons of sugar until smooth.
Step 2
Grate the lemon zest and mix it into the mixture.
Step 3
Sift the flour together with the baking powder. The dough will be soft and not too thick, and it should be placed directly onto the skillet using two spoons — it won't be possible to shape the pancakes by hand.
Step 4
Fry in vegetable oil over medium heat. Each side will take less than a minute.
Step 5
For the blueberry topping, combine the blueberries, 3 tablespoons of lemon juice, and sugar (if the berries are particularly sour, you can increase the amount of sugar) in a saucepan. Cook until the desired consistency is reached — the sauce will thicken in a couple of minutes.
Step 6
Optionally, you can sprinkle powdered sugar when serving.
