Description

Recipe from a restaurant in America. The cherry jam is cooked for just 10 minutes (and then infused for 2–3 hours), resulting in a very fresh and vibrant cherry concentrate. This recipe is adapted for an American audience.

Ingredients

  • Cottage cheese - 2 lbs
  • Wheat Flour - 3.5 oz
  • Chicken Egg - 1 piece
  • Vanilla salt - 0.1 oz
  • Vegetable Oil - to taste
  • Marinated cherries - 24.7 oz
  • Sugar - 5.3 oz
  • Water - 3 fl oz
  • Tarragon - 0.1 oz
  • Sour Cream - to taste

Step by Step guide

Step 1

Pass the cottage cheese through a sieve using a tablespoon (this will give the cheese a light and delicate texture). Add 80 grams of flour and the remaining ingredients, and mix thoroughly until you achieve a homogeneous mass and the sugar is completely dissolved (you can mix the sugar with the egg first, then add it to the cottage cheese). Form 80-gram balls, roll them in flour, and shape them into cheese pancakes.

Step 2

Fry in vegetable oil on both sides until golden brown. Finish cooking in a preheated oven at 356°F for 5–7 minutes. Alternatively, you can continue frying the syrniki in the skillet on low heat for an additional 2–3 minutes on each side.

Step 3

To prepare the jam, place the berries in a pot, add sugar, water, and chopped tarragon leaves. Gently stir. Turn on medium heat and bring to a boil, then reduce the heat and simmer until the sugar is completely dissolved. Remove the pot from the heat and let the jam steep for 2–3 hours.

Step 4

Serve the cheese pancakes on a plate, drizzle with jam, and place sour cream alongside.
