Ingredients
- Cottage cheese - 3.5 oz
- Banana puree - 1.8 oz
- Soft fat-free cottage cheese - 3.5 oz
- Wheat Flour - 2.6 oz
- Dried Blueberries - 1.1 oz
- Olive Oil - 1 fl oz
Step by Step guide
Step 1
In a deep bowl, mix the two types of cottage cheese.
Step 2
Grate the banana on a coarse grater and mix it with the cottage cheese.
Step 3
Add salt and sugar to taste.
Step 4
Rinse the blueberries, pour boiling water over them, and let them sit for 10-15 minutes.
Step 5
Add half of the flour to the bowl with the cottage cheese and banana mixture. The second half of the flour will be used for shaping the pancakes.
Step 6
For shaping the pancakes, you will need a cutting board (it's easier to use either a very thin plastic one or, conversely, a thick plastic one. A wooden board is inconvenient because the banana gradually absorbs the flour, which can make the pancake mixture too runny).
Step 7
Rinse the blueberries, dry them, and add them to the mixture. Mix thoroughly with a spoon or by hand. Sprinkle the cutting board with the remaining flour.
Step 8
Divide the cheese mixture into balls of equal size.
Step 9
Roll each ball in flour, flatten it, and use a knife to create a pattern on each side — a grid. When applying the pattern, the knife should be positioned at an angle of about 10-15 degrees horizontally, flattening the pancakes.
Step 10
Add 75 grams of olive oil to a preheated skillet.
Step 11
Place the pancakes in the skillet and fry until cooked through.
