Description
Melted curd and boiled condensed milk elevate morning cheese pancakes to a new level — in this form, they can easily transition from breakfast to dessert. This recipe was shared with us by chef John Smith from a popular American diner.
Ingredients
- Cottage cheese - 2 lbs
- Cottage cheese - 2 lbs
- Sweetened Condensed Milk with Coffee - 17.6 oz
- Wheat Flour - 3.5 oz
- Sugar - 5.3 oz
- Vanillin - 1 piece
- Chicken Egg - 4 pieces
- Salt - to taste
Step by Step guide
Step 1
Separate the eggs into yolks and whites, and beat the egg whites. Mix together the regular cottage cheese, egg yolks, flour, sugar, salt, and vanilla. Then gently fold the beaten egg whites into the mixture.
Step 2
From the resulting mixture, shape the cheese pancakes. You can add raisins if you prefer not to deal with a filling.
Step 3
Blend the condensed milk and melted cottage cheese in a blender until smooth. Place 10 grams of the resulting mixture in the center of each cheese pancake and seal it so the filling stays inside. Gently press with your hand to flatten the pancake slightly. Fry on both sides until golden brown, then bake in the oven until fully cooked.
