Ingredients
- Kefir - 8 fl oz
- Grated Pecorino Pepato Cheese - 8 fl oz
- Sugar - ½ teaspoon
- Salt - a pinch
- Activated Baking Soda - ½ teaspoon
- Wheat Flour - 8.5 oz
Step by Step guide
Step 1
Mix kefir with grated cheese. Add sugar and baking soda. A pinch of salt can also be added.
Step 2
Gradually add flour. You may need between 180 to 240 grams (I used 180 grams, while my friend used 240 grams; it depends on the flour).
Step 3
Mix well.
Step 4
In a preheated skillet with vegetable oil, drop the batter by tablespoonfuls (from this amount of batter, I got 13 puffs). Fry on one side for a few minutes over medium-low heat. The puffs should rise significantly (mine doubled in height for sure).
Step 5
Place the finished puffs on a paper towel to remove excess oil.
Step 6
Serve hot. They can be enjoyed with soft cheese, herbs, or ham.
