Ingredients
- Courgette - ½ piece
- Tortillas - 4 pieces
- Scallions - 10 stalks
- Cilantro - 1 bunch
- Cheshire Cheese - 7.1 oz
- Black Cumin (Cumin) - 2 tablespoons
- Flaky sea salt - a pinch
Step by Step guide
Step 1
Take a skillet that can fit a tortilla whole.
Step 2
Prepare the filling for the quesadilla. Grate half of the zucchini and the cheddar cheese on a coarse grater.
Step 3
Mix them in a bowl with the chopped green onions and cilantro.
Step 4
In a dry hot skillet, toast the cumin and crush it in a mortar with the coarse salt.
Step 5
Add the spices to the filling and mix well.
Step 6
Place one tortilla on a work surface and spread half of the filling on it, smoothing it out with a silicone spatula, leaving some space at the edges, then place the second tortilla on top and press down firmly with a kitchen spatula.
Step 7
Repeat the same process with the two remaining tortillas.
Step 8
Carefully transfer the quesadilla to the hot skillet and fry for 1–2 minutes on each side. Turn carefully to avoid spilling the filling.
Step 9
Cut with a pizza cutter and serve with guacamole or taco sauce.
